Black currant,caramel pie

When your mind wants to have something sweet...


This recipe has a good mix of sweet and sour. You can get 12-14 pies depending on the size of pies you decide to make. Serve your pies with ice cream or vanilla sauce.

Black currant,caramel pie

Dought:

  • 200 grams butter or margarine
  • 1½ dl sugar
  • 1 egg
  • 1 dl potato flour
  • 3 dl wheat flour
  • 1 teaspoons baking powder

  1. Mess up room temperature butter and sugar together until they are whipped as foam.
  2. Combine egg and foam together.
  3. Combine dry substances together.
  4. Throw flour mixture to foam container.
  5. Move the dought into fridge to keep it cool. Cool dought is easier to bake as a thin sheet.

Fillings:

1½ dl black currant jam

1 cans (380 grams) condensed milk
1 tablespoon butter
1 tablespoon brown sugar

  1. Mix the ingredients in a high container. Please, check that container will fit to your microwave oven.
  2. Move the ingredients into microwave oven and let them boil about 10 minutes. Stir the caramel mixture now and then.
  3. When the caramel mixture has been thickened it is time to move it to cool place.

Use metal molds. Metal or aluminum molds are best.

Compilation:

  1. Coat the molds with butter.
  2. Roll the dought on a floured surface as thin sheet.
  3. Cut suitable pieces of sheet and place them into bottoms of molds.
  4. Put 1 teaspoon of black currants jam on dought in molds.
  5. Coat black currant jam in molds with 1-2 teaspoons of caramel.
  6. Roll and cut thin covers from the dought. 
  7. Put the covers on molds.
  8. Connect cover and bottom parts well to together.
  9. Make couple of small air holes in the middle of the pies.
  10. Heat the oven to 200 degrees.
  11. Bake your molds with dought in middle of the oven about 12-15 minutes.
